Another Cool Mango Chutney

Ingredients

* 2 1/4 raw mangoes
* 4 tbsp. salt
* 2 1/2 cups water
* 2 1/3 cups sugar
* 2 cups vinegar
* 2 tsp. finely chopped ginger root
* 2 tsp. garlic, crushed
* 2 tsp. chili powder
* 2 cinnamon sticks
* 1/2 cup raisins
* 1/2 cup dates, pitted
INSTRUCTIONS
* Using a sharp knife, peel,halve, and pit the mangoes. Cut the mango flesh into cubes. Place the mangoes in a large bowl. Add the salt and waterand leave overnight. Drain the liquid from the mangoes and set aside.
* Bring the dugar and vinegar to a boil in a large saucepan over a low heat, stirring.
* Gradually add the mango cubes to the sugar and vinegar mixture.
* Add the ginger , garlic, chili powder, cinnamon sticks, raisins and dates, and bring to a boil again, stirring ocacionally. Reduce the heat and cook for about 1 hour, or until the mixture thickens. Remove from the heat and cool.
* Remove the cinnamon sticks and discard.
* Spoon the chutney into clean dry jars and cover tightly with lids. Leave in a cool place for the falvors to delope fully.

MANGO CHUTNEY RECIPE...a great recipe to try !

INGREDIENTS
  • 16 mango, 1/2 hard & green, keep pieces fairly lg. & long
  • 6 lg. onions
  • 1 1/4 qts. cider vinegar
  • 1 c. lime juice
  • 2 lbs. light brown sugar
  • 1 tsp. dry hot pepper
  • 1 tbsp. whole mustard seed
  • 1 tbsp. whole celery
  • 1 tbsp. ground cinnamon
  • 1 1/2 tsp. ground cloves
  • 1 tbsp. ground allspice
  • 1/2 tbsp. ground ginger

INSTRUCTIONS
FIRST DAY: Mix vinegar, sugar, hot pepper, spices, onions and mango.
Heat to boiling. Cover. Let stand overnight.
NEXT DAY: Add lime juice and 1 cup raisins. Simmer 4 to 5 hours until mango pieces turn color and become transparent. Place in hot sterilized jars. Makes about 22 1/2 pints. The mango chutney recipe is ready to serve...great taste !

MANGO CHUTNEY RECIPE

INGREDIENTS
  • 10 lg. firm, ripe mangoes
  • 1/2 pt. raisins, seeded
  • 1/2 pt. vinegar
  • 1/2 pt. lime juice
  • 1 1/2 c. brown sugar
  • 2 chili peppers (or 1/2 tsp. dried)
  • 2 garlic cloves, grated
  • 1 onion, chopped fine
  • 1 tbsp. mustard seed
  • 1 tbsp. celery seed
  • 1 tbsp. ground ginger
  • 1 1/2 tsp. salt
INSTRUCTIONS
Pare and cut the mangoes in small pieces. Put all ingredients together in a crock or bowl. Cover and let stand overnight. Cook next morning for three hours. Seal in sterilized jars. Makes 4

INGREDIENTS
  • 1 pkg. cream cheese (8 oz.)
  • 1 bottle Major Grey's hot mango chutney
INSTRUCTIONS
Pour mango chutney over cheese. Serve with Wheat Thins. Great !

MANGO CHUTNEY CURRY CHICKEN SALAD ... a great mango chutney recipe to try ! Great one !

INGREDIENTS
  • 1 egg yolk
  • 1/2 tsp. Dijon mustard
  • 2 tsp. tarragon vinegar
  • 1/4 tsp. lemon juice
  • 1/2 c. safflower oil
  • 1/2 c. olive oil
  • 2 tsp. balsamic vinegar
  • 2 tbsp. curry powder
  • 3/4 c. mango chutney
  • 4 cooked chicken breasts, in pieces
INSTRUCTIONS
Mix egg yolk and mustard. Add tarragon vinegar and lemon juice. Add, whisking: safflower oil and olive oil. Add balsamic vinegar, curry powder and chutney. Mix well with chicken pieces. The mango chutney recipe is ready to serve...delicious !

MANGO CHUTNEY CHICKEN

INGREDIENTS
  • 6 tbsp. sweet butter
  • 2 tbsp. curry powder
  • 1/4 c. dry white wine
  • 2 frying chickens, cut in quarters
  • 1 1/2 c. mango chutney, chopped, with syrup
  • 2 tbsp. shredded coconut
  • 1 tbsp. snipped chives
INSTRUCTIONS
Preheat oven to 350 degrees. Melt butter, add curry and cook for 2 to 3 minutes. Add wine and stir; remove from heat. Place chicken in pan and baste with butter mixture. Bake for 30 minutes. Spread chutney over chicken pieces and bake 30 minutes longer, basting frequently. Remove chicken to serving platter. Keep warm. Reduce juice by boiling 3 to 4 minutes. Pour over chicken and sprinkle with coconut and chives. The mango chutney recipe with chicken is ready. Enjoy it !

GREEN PEPPERCORN STEAK WITH MANGO CHUTNEY SAUCE


INGREDIENTS
  • 3 lb. sirloin steak, 1 inch strips
  • 1/4 c. green peppercorns
  • 1/2 c. butter
  • 1/2 c. brandy or cognac
  • 1 c. heavy cream
  • 1/2 c. mango chutney
  • Little salt
INSTRUCTIONS
Cut sirloin into 1-inch cubes, grind or with potato masher smash peppercorns. Put cubes and peppercorns in plastic bags, toss well. Heat 1/4 cup butter in heavy skillet (very hot). Brown half of cubes, remove, brown last half cubes in 1/4 cup butter. Keep warm.
Add to chilled juices, bring brandy to boil. Reduce heat to simmer, add salt, heavy cream and chutney. Let heat to almost simmer. Add meat for a few minutes. The mango chutney recipe is ready to serve over rice...hmm..nice ! Enjoy it with friends !
